The cold chain is responsible for keeping the fermented food at the recommended temperature. If it is interrupted, the best before date, taste and texture of the product may change. It can also cause the fermentation process to continue and create increased pressure in the product.

It is therefore important to be extra cautious and pay attention to any possible signs that could indicate that the cold chain has been broken. For example, look for a change in taste or texture of the fermented food - it could be a sign that it is no longer safe to eat.

Fermented foods contain microorganisms that need to live in the right conditions to make the most of their nutrients. If the cold chain is broken and the ambient temperature rises, these microorganisms can become harmful, rendering the fermented food inedible.

Because of this, it's important to always make sure you're only eating fermented foods that are kept at the recommended temperatures. If you are unsure or see signs of a break in the cold chain, it is better to be on the safe side and throw it away. This is how you ensure that your health is protected.

However, there are a few things to keep in mind when storing fermented foods in the fridge:
- Make sure the food is well sealed. Open jars or containers can allow air in and accelerate fermentation.
- Always store fermented foods separately from other foods. This will prevent cross-contamination with bacteria or mold.
- Make sure the fridge is not set too cold. Temperatures below 4 degrees Celsius can cause certain types of microorganisms to die and stop fermentation.
- Avoid storing fermented foods in the refrigerator for a long time. Although refrigerated keeps them longer than room temperature, they should still be consumed within a few weeks.

By following these tips, you can be sure that your fermented foods will stay fresh and tasty for a long time.

Fermentation is an ancient technique that has been used to produce various foods for thousands of years. It is a biological process in which microorganisms such as bacteria or yeast convert sugars and starches from plant or animal foods into alcohol or acid. Through this process, the nutrients in the food are preserved and can even be increased.

Fermented foods are therefore a great addition to a healthy diet. They contain beneficial bacteria that can help strengthen and support the digestive system. In addition, fermented foods are rich in vitamins, minerals, and other nutrients that provide energy to the body and provide it with the nutrients it needs. Fermented foods also have many flavor benefits - they are often acidic or salty, making for an interesting change in your diet.

From fermented sauerkraut to kimchi and kombucha, each fermented food has its own flavor and specific health benefits. Therefore, it is important to understand which type of fermentation best suits your needs. If you want to learn more about the different types of fermentation, take a look around our site!
